Pascal Verhaege is the driving force behind the wine making at Chateau du Cedre and he brings a gentle touch to what is traditionally a region of big tannins and unapologetic austerity. The wines of Chateau du Cedre focus on softness, richness and balance through gentle extraction, long vattings, malolactic fermentation and the judicious use of oak. His Cahors is predominantly made from Malbec with smaller proportions of Merlot and Tannat. It is inky black with sumptuous flavours or red and black fruits and elegant hints of smoke, liquorice and spice from the oak ageing – a modern classic in the making.
