We love both the weird and the wonderful at Ten Green Bottles and this wine definitely fits both criteria. A speciality of Basque country served in the bars from Bilbao to San Sebastien, it is traditionally poured from a great height into tiny tumblers where it fizzes to a chalky White before turning clear again and retaining a lively spritz. The flavours are not for the faint of heart - sour green apples and pears with teeth juddering acidity - it's a good idea to pair this wine with equally dramatic food. Cantabrian anchovies, stuffed pimientos and smoked fish are all a very good idea.
