Pet Nat refers to the oldest form of sparkling wine production - very simply, you bottle the wine whilst still fermenting, allowing carbon dioxide to be trapped in the bottle, giving the wine its fizz. Loxarel Ancestral A Pèl is made from 100% Xarello grapes from their own biodynamically farmed vineyards. Fermentation with wild yeasts starts in terracotta amphorae with the skins, and finishes in the bottle. A silky, ample and balanced wine, it has complex aromas, with ripe white fruit, white flowers and light citrus. An elegant salty touch gives it a long and persistent finish.
