Chardonnay Sous Voile 2015, Chevassu-Fassenet, Jura, France (O)

apple, quince, yellow plum
Marie-Pierre is a young vigneronne whose wines are definitely old style - in this case made using the traditional local technique known as ‘sous voile’, or under the veil. This means a thick layer of yeast is allowed to develop on top of the wine whilst ageing, preventing oxidation and giving the wine characteristic flavours of walnut, almond, spice and apple. This is a delicious, complex, layered and unusual organic Chardonnay from the Jura, both a very drinkable yet pretty serious wine.
